Whoop•ie Pie: noun
a dessert or snack made from two soft, cake-like cookies, typically chocolate, with a creamy filling sandwiched in between.
“Whoop! Whoop! Let’s eat cake!” is my motto! 🙂
The Keto lifestyle isn’t the easiest thing to maintain, but it’s not the most difficult either. Being able to have delicious desserts makes the transition to low carb even easier. Sure, you can go “cold turkey” and not allow your tastebuds ever encounter the pleasure of delicious cake again. But, come on, who really wants to give up cake?
These “pies” aren’t really as sinful as they look. People sometimes refuse to try them because they simply look too good to be Keto-friendly. These Whoopie Pies do not contain sugar! They are sweetened with stevia and erythritol which are natural sugar alcohols, not artificial ones. Even the Lily’s chocolate chips are sweetened with erythritol, inulin, and stevia extract.
These amazing cakes (they aren’t technically pies) are also made with both almond and coconut flour; therefore, they should not significantly raise blood sugar levels. Each contains about 8 grams of carbs.
In the photos, you can see I enjoy the process of getting these delicious cakes into the dessert case at Health Trail Natural Foods for you to purchase for your eating pleasure. My favorite part is making a cream cheese frosting with chocolate ganache. It’s all I can do to refrain myself from licking the spatula. Hey, check out my fancy schmancy double-broiler!
